
This is a very easy recipe that I have been using since my days in Portugal. Here’s what you need:
- Boneless or Bone-In Pork Loin
- Small yellow potatoes
- Olive Oil
- Beer (any type)
- Sliced Onions
- Peeled Garlic
- 2 Bay Leaves
- Paprika
- Salt
- Pepper
- Red Pepper Flakes (optional)
- Fresh Parsley or Basil (optional)
Place the pork in an oven safe dish and surround it with the potatoes. Rub these with the above ingredients. I don’t have specific measures as I do everything by eye. Turn the oven to 375 Fahrenheit degrees, and cook 15-20 minutes per pound. Once ready, slide the pork and serve! Bom Apetite.
