This dish is so easy to make and yet, looks so elaborate and gourmet. Publix often has previously frozen lobsters on sale for $5.99 each, and that’s when I make this dish.

Ingredients:
- Lobster (fresh or previously frozen)
- Linguine or your favorite pasta
- Olive Oil
- 3 chopped tomatoes
- 1 chopped onion
- Parsley
- Rosemary
- White Wine
- 1/2 Cup of Water (if you need extra sauce)
- Salt, black pepper and red crushed peppers (as per your preference)
Preparation:
In a large pot, cover the bottom with a generous amount of olive oil and place all ingredients but the lobster (onions, tomatoes, parsley, rosemary, white wine and seasoning). Let it all boil for 15-20 minutes. While that cooks, boil the pasta on a separate pot (7-15 minutes depending on the pasta).
Once the sauce is cooked, add your raw lobsters to it and let it cook on medium high while covered for about 5 minutes. Lobster cooks really fast and you do not want to overcook it.
Once the pasta is cooked and rinsed, plate it on a deep dish. The sauce should be a bit thicker now but still light, not like a paste. Ladle a good amount of sauce over the pasta, and finish it by topping it with one of the cooked lobsters.
