This recipe is actually a funny story. One summer night David has grilling juicy steaks and I didn’t realize I was short on pantry supplies and vegetables. I ran to the fridge and all I had left was 2 avocados and half of a cucumber. I looked outside and he waved from the BBQ with a “Can’t wait to see what you are preparing as a side dish!”. I froze. I offered him a confident smile and yelled “You are gonna love it!!”, without having a clue what was to come.
I grabbed the 2 avocados, the half cucumber, and chopped it all up. Without knowing where I was heading, I mixed both in a bowl, added some seasoning and voila, it came out looking like a fancy side dish! That my friends, is what I call a true win! Ha.
So here’s the recipe for my Avocumber:
- 2 chopped avocados
- 1/2 half chopped cucumber
- chopped cilantro
- olive oil
- salt pepper
- red flakes (optional)
- squeeze of lemon juice
